Savory Gourmet Sliders
featuring DHC Núñez de Prado Extra Virgin Olive Oil
INGREDIENTS (makes 10 sliders)
1 pound ground lamb or turkey
1/4 cup finely chopped red onion
2 ounces feta cheese, crumbled
2 tablespoons spice rub
Freshly ground black pepper
2 tablespoons DHC Núñez de Prado Extra Virgin Olive Oil
1 bunch watercress or arugula
10 dinner rolls, toasted or grilled
1 cup chopped tomatoes
1/2 cup chopped Kalamata olives
2 Tablespoons chopped parsley
2 Tablespoons finely chopped red onion
1 Tablespoon Núñez de Prado Extra Virgin Olive Oil
Mix together the ingredients for the olive salsa, set aside.
Mix together the ground meat, onion, feta, seasoning and black pepper. Form mixture into 10 patties. Brush each patty with some olive oil to prevent sticking and grill or pan-fry the patties over medium heat for 3 minutes on each side.
Serve each slider on a roll with some watercress and a spoonful of olive salsa.
For a vegetarian option, grill a baby Portobello mushroom that has been brushed with Núñez de Prado Extra Virgin Olive Oil and sprinkled with spice rub.
